This wonderful heirloom spinach has thick, succulent, dark green savoyed leaves that are sweet in salads or cooked. It's best planted in early spring or fall. If fall planted, it will over-winter and produce much earlier the following spring. 50 days, OP.

Timing: Spinach does best in cool weather. Direct sow late winter to mid-spring, and again from late summer to mid-autumn.

Seeding: Sow seeds 1cm (1/2") deep, 2cm (1") apart, in rows 30-45cm (12-18") apart. Thin plants to at least 5-8cm (2-3") apart, or further if you want larger leaves. Sow deeper in warm soil (where the moisture is). Baby leaf spinach can be sown quite densely with 2 plants for every 4cm (1 1/2").

Growing: Spinach required rich soil and a fairly neutral pH of 6.0-6.5. Dig in 1/4-1/2 cup balanced organic fertilizer beneath each 1m (3') of row. For baby greens, pick when the leaves are 7-10cm (3-4") long. Individual leaves can be picked at any time, until the plant has started to bolt.
